Caixa da Fruta – Brazil
This month’s featured coffee is a lovely single origin from the Carmo De Cachoeira area of Brazil. Situated in the southern state of Minas Gerais and sitting at an altitude of 959m above sea level, the climate sees average temperatures of between 19 and 25 degrees. As well as coffee, other mainstays of the local economy include milk production and the growing of beans, sugarcane and potatoes.
Translating as ‘box of fruit’, this mixed variety coffee is naturally processed in 15,000 litre static boxes which allow a constant airflow through and around the coffee cherries via a vented base and multiple thermometers ensure the coffee temperature never exceeds 40 degrees. After drying the coffee is allowed to rest for up to 2 weeks before milling. This process encourages the development of the fruity notes evident alongside other flavours such as hazelnut and milk chocolate.
This coffee has received a speciality coffee score of 82+, putting it firmly in the ‘Very Good’ bracket. Roasted to my own exacting profile developed over the past 2 years, this coffee works in all brewing methods.
